2015 Estelle Vineyard Cabernet Sauvignon

Our 2015 Cabernet Sauvignon (Hampton clone) from Estelle vineyard was sourced with the goal of being a great component of our Santa Barbarian. It is 25% of that wine, but in the barrel, like the Petite Verdot, it really wowed us and we decided to bottle some separately.  Estelle vineyard is in the Los Olivos AVA.  John Belfy is the farmer and always takes perfect care of our blocks.  The wine has 10% Petite Verdot in the blend This wine was gently destemmed then cold soaked for 4 days and fermented with gentle punch-downs. Aged in all tight-grained French oak with 33% new (1 of 3) for 19 months.
