2018 Spanish Caravan

Our 2015 Grenache clone 110R from Watch Hill vineyard is another small bottling.  Watch Hill is located in the cool climate Alisos Canyon area. Grenache here is always the last grapes to be harvested.  We did a saignee on the fruit and it is a key component of our darker style Rose.  The saignee raises the skin to juice ratio allowing for more extraction, bu we are careful to not over do it. The additional extraction is important because the grapes are so big that the natural skin to juice ratio would not create as complex of a wine. It’s a traditional step in the Rhone where we have learned many details from our favorite producers.  This wine was gently destemmed then cold soaked for 4 days and fermented with gentle punch-downs. Aged in neutral French oak barrels for 19 months.
